From our grove of old Piñonera olive trees comes the raw material of this most extraordinary olive oil, which is sustainably produced and results in a full aromatic palate.
The Calvestra estate is located at an altitude of 900m above the Mediterraneanon a high, rainfed slope composed of Dolomite limestone that has a chalky/sandy texture and is of poor quality.
Traditional with minimal intervention. Farmed organically in small, dense plantations.
Hand-picked in boxes. Time of collection established according to the index of fruit ripeness.

Olives are milled at night, immediately after collection. They are then briefly kneaded in cold conditions, extracting a low yield (9%).

An extra virgin olive oil with an intense green fruitiness that combines vegetable notes with a notable balsamic flavour underscored by velvety notes of ripe, tropical fruit. Initally bitter and slightly spicy with a marked astringency, giving way to a lasting fresh, light and enveloping palate that ends on a tantalizingly sweet note.
