Finca Calvestra is the fruit of an intensive effort to reestablish the Merseguera grape – an indigineous variety that was once on the brink of extinction.
Vineyard and viticulture
The Calvestra estate is located in Requena, at an altitude of 900m. Vines composed of Merseguera shoots grafted onto old Bobal rootstock. Vineyard soil composed of loam and clay rock with high chalk content. Traditional viticulture employed, using a strictly non-irrigated gobelet system.
Organic wine. Suitable for vegans.
Manual harvest using 15kg boxes. Average yield per hectare of 4.200 kg.
De-stemming carried out on cluster sorting table followed by gentle crushing. Soft pressing producing own grape must. Fermented in 225l tanks with native yeast.
9 -11 months in 225l acacia Bordeaux casks, with a fine sediment included.
Between August and September, without any stabilization or filtration treatment.

Tastes great with...
Sauce-based pastas, seafood rice dishes and salads. Ideal as an aperitif, with white meats, fish or stews. Also with various soft or blue cheeses, and with foie.
