HOW WE WORK

It is during the winemaking process that the characteristics of a wine’s previous year out in the vineyards truly comes to life.

VINEYARDS GROWN SUSTAINABLY, AND WITH UNDENIABLE SOUL

D.O.P. El Terrerazo is an estate wine with organic certification, and a viticulture that prizes cultivation via natural methods and rigorous processes using grapes exclusively from our own vineyards.

At Mustiguillo, we use a natural and sustainable viticulture that is respectful of our surroundings and environment at all times.
Our grounds are kept alive using vegetable covers comprised of mustard, radish, legumes and other Mediterranean species that supply organic nutrients, enriching the vines and acting as natural biocides.

VITICULTURE

Our gobelet-trained plant cultivation system is strictly non-irrigated

Production, established according to leaf cover area (and not per hectare), is calculated at the harvest stage which typically takes place during August. It is at this moment that some of the branches are sacrificed, this way refocusing all the qualities of the fruit to those select branches that will go on to mature fully.

Only a few gobelet-trained vines are irrigated individually, and are done so under the premise of always achieving a better quality not a bigger quantity.

Measuring instruments such as dendrometers and humidity sensors are used to monitor vineyards and to indicate when necessary irrigation should be carried out.

HARVEST

Harvest time.
Gathering the unique spirit and character of a year’s worth of growth.

In line with set tradition, harvesting is done with our bare hands, one cluster at a time and using small boxes of 15kg. Selection happens during harvest, with clusters that meet our required standards being immediately transported from the vineyard to our cellars.

THE WINERY, WHERE TIME DEVELOPS INTO BODY AND CHARACTER

This is the time to take it slow. Down in the cellars is where each wine takes the time needed to fully blossom into the many flavours that color its complex personality.

WINEMAKING

Treating the wine with respect at every stage of the process. A vat for each parcel.

On the vine and on the selection table, we choose only those grape berries that comply with our tenets of quality and discard all those that are not up to the required standard set for our wines.

Using gentle pumping, we create our wines by using our own first-press grape juice (must).

Each parcel is fermented separately in its own dedicated vat using our very own house yeasts.
