Vineyard and viticulture
The Calvestra estate is located at an altitude of 900 m above the Mediterranean. Composed of Dolomite limestone that has a chalky/sandy texture. Vines composed of Merseguera shoots grafted onto old Bobal rootstock. Traditional viticulture employed, using a strictly non-irrigated gobelet system. A process that is respectful of the environment at all times.
Organic wine. Suitable for vegans.
Manual harvest using 15 kg boxes.
Average yield 0.9 kg/m2 of leaf surface.
Average yield per hectare of 6000 kg.
Each plot and/or variety is fermented separately. De-stemming carried out on cluster sorting table followed by gentle crushing. Cold maceration at around 6° for 4-8 hours depending on plot or variety. Deposited to temperature controlled 25-50 Hl stainless steel tanks and fermented at 10-16° using native yeast.
In stainless steel tanks, with a fine sediment included.
