Vineyard and viticulture
El Terrerazo is situated 800m above the Mediterranean.
Composed of Dolomite limestone that has a chalky/sandy texture.Traditional viticulture employed, using a strictly non-irrigated gobelet system. Ground is maintained with an alternating vegetable cover. A process that is respectful of the environment at all times.
Organic wine. Suitable for vegans.
Harvest
Manual harvest using 15kg boxes.
Average yield 0.9kg per m2 of leaf surface.
Average yield per hectare of 4.500kg.
Grape variety**
70-75% Bobal, 15-20% Garnacha, 10-15% Syrah
Vinification
Each plot and/or variety is fermented separately. De-stemming and gentle crushing carried out on cluster and grain sorting table. Fermented in temperature controlled 80Hl-100Hl French oak and stainless steel tanks. Fermented for 11-13 days with light pumping and gentle pigeage at an average temperature of 26°. Post-fermentation maceration carried out for an additional 5-8 days. Manual emptying by gravity using only grape must.

Aging
10 months in a mix of French oak casks and 50-80HL tanks.
Bottling
Between September and November, without any stabilization treatment.

Rice dishes, Asian cuisine, cured meats, pasta or medium cheeses. Also ideal with mushrooms, salads or as an aperitif.
